Joseph Hiester was known as "Joseph" in his public life - military, government service, deeds, and probate. But in his father's will he is called "Jost". The given name "Jost", also spelled "Yost", was quite common in the Hiester family, and in that family also called Joseph.
The FamilySearch Wiki calls "Yost" a nickname for "Josef", but an internet search suggests that it is very uncommon.6 - Note: Death notices:

Joseph Hiester's children are named in a petition submitted by his daughter Catharine as part of the probate process; She named:
son John S. Hiester, herself Catharine intermarried with John Spayd, Rebecca intermarried with Henry A. Muhlenberg, Elizabeth deceased who had been intermarried with Levi Pawling, Mary deceased who had been intermarried with the same Henry A. Muhlenberg. The children of the deceased daughters are also named. The children of Elizabeth were Joseph Pauling, Henry Pauling, Elizabeth Pauling intermarried with Thomas Ross, James Pauling Rebecca Pauling, Ellen Pauling and Mary Pauling. The only child of deceased daughter Mary was Mary E. Muhlenberg.
In her book V.E.C. Hill states that there was another son Adam, apparently a twin of Mary, of whom no more is known.10,2
